1 med. tomato, coarsely chopped
½ c. spinach, chopped
½ small onion, chopped
2 T finely chopped fresh basil
2 T chopped fresh oregano
1 c. shredded Colby jack or cheddar cheese
5 eggs
½ c. Bisquick baking mix
2 c. milk
¼ c. sour cream
½ t. salt
¼ t. black pepper

Preheat oven to 350 degrees.  Spray a 10” deep dish pie plate with cooking spray.  Pour  1 T. olive oil in medium skillet and sauté onion over med. high heat until translucent.  Turn off heat and stir in spinach.  Turn onion mix into pie plate.  Add tomato evenly over onion.  Sprinkle with fresh chopped herbs.

Place remaining ingredients in blender, cover and blend for one minute.  (Can be whisked by hand until well mixed and frothy).  Pour gently over vegetables in pie plate.

Bake in preheated oven for 50-55 minutes or until top is golden brown and knife inserted in center comes out clean.  Best if left standing for five minutes before cutting.
